Some evenings call for a little extra comfort—and few things do the job like a warm, homemade roll fresh from the oven. This is my trusty, weeknight-friendly recipe for soft dinner rolls that come together in just about the time it takes to make a pot of soup. Whether you're prepping for a midweek supper or looking for that final touch to make a gathering feel special, this recipe never fails.

Ingredients:

  • 3 cups flour

  • 1 tbsp instant yeast

  • ⅓ cup sugar

  • 1 tsp salt

  • 1 egg

  • 1 cup warm milk (not boiling)

  • ⅓ cup room temperature butter

Method:
In the bowl of a stand mixer, combine flour, yeast, sugar and salt. Give it a good mix, then add the egg and warm milk. Using the dough hook, mix until a shaggy dough forms. Add the butter and knead on medium speed for about 5–6 minutes until the dough is smooth and stretchy. Cover and let rest for 10 minutes.

Divide into 12 equal portions (I like to weigh them for even baking), shape into balls, and arrange in a buttered baking dish lined with buttered baking paper. Cover and let proof in a warm spot for 30 minutes. (My secret: the cup-warmer of the coffee machine is perfect in winter.)

Bake at 170°C for 15 minutes, then brush with melted butter straight out the oven. Serve warm with your favourite soup, stew or just a pat of butter and a sprinkle of Maldon salt.
